Inspired by the spirit of omakase — a chef-curated journey — “HOME”akase offers a unique take on tasting menus, blending multicultural influences with Wisconsin-grown roots. This one-night-only dinner is deeply personal, drawing from Chef Justin’s rural upbringing and his passion for Midwestern ingredients, reimagined through a global lens.
Each course is a surprise, handpicked and crafted by the chef, and paired with optional drink selections to complement the experience.
ABOUT THE CHEF
Born and raised on a small beef farm in Sparta, Wisconsin, Chef Justin Carlisle is the visionary behind Ardent, a nationally acclaimed fine dining restaurant in Milwaukee. A five-time James Beard Award finalist for Best Chef: Midwest, Carlisle is known for his elegant, ingredient-driven tasting menus that blend modern technique with nostalgic storytelling and a deep reverence for local sourcing.
His work has been featured in Bon Appétit, Food & Wine, and Condé Nast Traveler, which named Ardent one of the 15 Best New Restaurants in the U.S.. Carlisle’s culinary philosophy centers around seasonality, simplicity, and emotion — each dish tells a story, often rooted in memory and place.
